Chef Jason Toledo commands the kitchen at Barcelona in West Hartford. After graduating from CIA, Chef Jason moved to NYC to work as a sous chef under Alex Raij, at El Quinto Pino. Working under Chef Alex for three years, Jason was inspired by Chef Alex’s incredible palate and ability to showcase ingredients. After leaving NYC, Chef Jason gravitated towards Barcelona’s focus on mediterranean cuisine, rustic authenticity, and storied vendor relationships. Having toured across the country from Brookline, MA to Denver, Co, Jason has finally found his home in West Hartford, CT. As an Executive Chef, he has carried this tradition of mentorship into his kitchen. Chef Jason says his greatest accomplishments have not been his own promotions but the promotions of those on his team. Using patience as his greatest technique, Chef Jason focuses on respecting the integrity of each ingredient to create a menu of simplistic, powerful, ingredient driven tapas.
