Chef Victor has called Florida home for over a decade, bringing roots that run deep and a menu that’s an ode to the local—snapper pulled fresh from the waters, seasonal produce sourced from farmers he knows by name, and Spanish recipes revitalized with vibrant, local ingredients. From the dining room, where the bay stretches into view, guests experience the moment, the place, and the story Victor is telling now—showcased through a menu that evolves with the seasons and his inspirations.
Chef Victor got his start at Barcelona Wine Bar as a line cook in Fairfield. His career path led him to Miami, where he served as Executive Sous Chef at AAA Four Diamond Barton G. Restaurant, collaborating with Ryan Smith and celebrity chef Jeff O’Neil. In 2015, he joined Centurion Restaurant Group, helping launch three Pisco y Nazca restaurants in Florida and Washington, D.C., before leading the relaunch of Bulla Gastrobars in Miami. Most recently, he led Platea, Pinecrest’s first Peruvian steakhouse, and reinvigorated Dragonfly Japanese Izakaya in Doral, Florida.
Now, at Barcelona in Tampa, Victor is crafting a menu that’s a culmination of his journey, Florida’s rapidly expanding culinary landscape, and his passion for letting ingredients speak for themselves.
