Chef Randall Braud’s culinary background began generations before he was born. His paternal grandfather, a New Orleans Chef, weaved through the cultural convergences of food and place in his New Orleans kitchen. His mother raised him on her Filipino cooking, embedded with the undercurrent of Spanish influences that would come full circle much later, long before Chef Braud was old enough to helm his own kitchen. Once he was, he brought that dynamic love of culture and diverse cuisines to restaurant after restaurant– one of which, the beloved Not Your Lola Filipino pop-up, was a direct line back to his Mother’s kitchen. As the Executive Chef of Barcelona, Chef Braud focuses on seasonality, and the diasporic cooking of the Mediterranean: from lush, green, Northern Spain, to African-influenced Southern Spain. His menu is speckled with what he calls “grandma dishes”, dishes that are simple, warm your soul, and are influenced by generations of gifted cooks.
