Castile-La Mancha is one of the most sporadically populated communities in the country. Bordered by the well-known cities of Madrid and Valencia, Castile-La Mancha is a symbol of Spanish culture ranging from its vineyards and oliveyards to Don Quixote. Castile-La Mancha is the producer of Spain’s best known cheese, Manchego, and also holds the world’s biggest vineyard. Toledo and Guadalajara are the major cities within the region.
